Can I use my existing Skype credits to extend my existing Skype annual subscriptions and if so how? I have no other use for the credits.

Yes you can.
Cancel your Subscription and repurchase it choosing Skype credit as the funding source.
Any unused time left on the original Plan will be automatically refunded to you.
