Most of the usb phones don't support linux, i was told that the new generation will come with linux support. Is a bit stupid since most of this devices come with linux embedded in the hardware.
Currently I got a desk voip and I dont even need to run it with any computer since it plugs directly into the ethernet. Another set is a ip/PSTN convertor which looks more like a mini-hub and is also OS agnostic.
