When I call echo123 I hear the audio in my ear but when it comes time to record nothing is recorded. I checked the audio mixer and the mic isnt muted. I'm not really sure where to go from here.

It sounds as tho its configured OK if you hear sound thru the ear phones in Skype.
A small thought and a "gotcha" that got me...
A "feature" of the Logitech USB headset 350 is that the microphone automatically mutes after a period of inactivity (and possibly on boot-up? I forget). Anyway, check the In-Line Volume and Mute Control (the round thingy with the clip). If the little blue light is blinking, the mike is muted. If the little blue light is not blinking, the mike is on.
If this does *not* help, post back and I'll see if I have other suggestions.
FYI, I am using linux 2.6.11.4-21.8. My distro is Suse 9.3pro and my gui is KDE3.4 - I have a sound board and speakers, so the headset was my 2nd audio device. After considerable struggle I did get this headset to work with Skype.

The blinking light does not appear to work on CentOS 5 linux and probably many others. Everything on the Logitech headphones works fine but the blinking light doesn't work for me on the Linux Os. Solution: do a test call BEFORE you make a real call. If you can't hear your voice, push on the mute button which is circle area where the blue light should be (its a button), that will unmute the mike. Then do another test call, i should work then. Yes is a pain and I'll see if anyone makes a driver or daemon that allows full control like with windows as well as push logitech to take a more active role in full linux support.

watch out that the mic has not muted itself (my logitech usb headset has a mute button on the side that I used to keep pressing without realising - if the red light is on, its muted!).
Also check that you have the correct mic selected under skype options, sound devices, sound-in. The Logitech mic should be easily visible in the list of options because it will be listed as logitech usb! Test it using the skype test call.
